That's right a little comfort food for you if your in the mood for that. At our Peep retreat a couple of weeks ago - one of the Peeps whipped up this little yummer for dinner. It's from one of the Gooseberry Cookbooks - I don't remember the name - but it's a big cookbook, not one of those smaller ones. The dish is called Chicken Pepper Pasta - here's the list of characters
- 6 tbsp butter
- 1 onion chopped
- 1 red pepper chopped
- 1 yellow pepper chopped
- 1 orange pepper chopped
- 1 tsp minced garlic
- ***3 lbs boneless, skinless chicken breasts cut into strips
- 1 tbsp fresh tarragon minced
- 3/4 tsp salt
- 1/4 tsp pepper
- 3/4 cup half and half
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 7 oz package vermicelli - cooked
****Regarding the chicken. Peep Linda used a precooked seasoned chicken for her dish and it was yummy. I used a package of plain chicken breasts which had 3 chicken breasts in it and was about 1 1/2 pounds of chicken and it was plenty. I think 3 lbs is probably quite a bit. Next time I will get the seasoned chicken breasts - but I had these on hand and needed to use them up - it was still yummy.
Melt butter in a skillet until sizzling, stir in onions, peppers and garlic. Cook over medium-high heat 2 to 3 minutes or until peppers are crisp-tender. Remove vegtables from skillet with a slotted spoon and set aside.
Add chicken, tarragon, salt and pepper to skillet. Continue cooking, stirring occasionally, 7 to 9 minutes or until chicken is golden and tender. Add vegtables, half and half and cheeses to chicken mixture. Reduce heat to medium, continue cooking 3 to 5 minutes or until cheese is melted. Add vermicelli, toss gently to coat and serve immediately. Serves 4 to 6
Not a pretty picture - should be on the navy plate for contrast - but it is gooooooood Clark (that's from National Lampoon's Christmas Vacation - Mr. Farmhouse and I say that all the time when something is good) - try it if your in the mood for some comfort food.
Well there's a new episode of Duck Dynesty tonight- dang that's a fun show. Anyone else out there hooked on watching this show.
