What do you do when a neighbor gives you some
rhubarb still warm from the sun
Well you make Rhubarb Muffins with streusal on top
Rhubarb Muffins
- Mix Together
- 1 1/4 cup brown sugar
- 1/2 cup vegetable oil
- 1 egg
- 2 tsp vanilla
- 1 cup buttermilk
- Stir In
- 1 1/2 cups chopped rhubarb
- Add
- 2 1/2 cup flour
- 1 tsp soda
- 1/2 tsp salt
- 1 tsp backing powder
- Stir everything together until blended and put into muffin tins - I used the texas muffin size pan. Spray your tin or use the cupcake paper liners
- Mix this together and sprinkle on top of muffins - I usually double this recipe for the streusal as I'm a streusal girl and love extra - but it's up to you
- 1 tbsp melted butter
- 1/3 cup sugar
- 1 tsp cinnamon
Bake at 350 for around 20 minutes and then check. When using the bigger size pan they can take a bit longer. These are moist and yummy muffins. This makes 9 of the BIG muffins. I kept 3 and gave the rest back to our neighbors to enjoy - because seriously I could eat them all, LOL.
Had a beautiful Saturday afternoon here at the lake - I took a book and Ms. Cami and enjoyed part of the afternoon enjoying the outside
and sometimes a girl just needs a nap after taking in the view
Yesterday we attended a wedding shower for an adorable couple getting married in July. It was at our friends wonderful lake place and the rain was nice enough to hold out so we could all be outside
Well first real official day of retirement for Mr. Farmhouse - so we are taking off to go spend the day in Fargo to do a bunch of errands and see the kids and new puppy. On my to buy list - a new camera. Little Silver has given me wonderful service, but seems to be slowing down a bit - hmmmm could it have anything to do with the number of times I've dropped her, lol. But before we go - I think I hear the last muffin calling my name - shhhh do you hear it, well I do.
See the nesting has begun :)

Good timing, I bought some rhubarb at the farmers market a couple days ago. The muffins look mouth watering. Enjoy your nesting.

That looks like a great way to relax! The muffins look way yummy.
Your pretty tablecloth and napkin must be Sanctuary by 3 Sisters...I made a quilt out of that some years ago and gave it to my cousin on her retirement from nursing :)
